Applesauce
4 to 5 Gala apples (or your favorite red apple, but not Red Delicious), cored and chopped
3 to 4 Granny Smith apples, cored and chopped
2 tablespoons brown sugar
1 to 2 teaspoons ground cinnamon
1 star anise
1/2 cup apple cider vinegar
Apple-Fig Glaze
2 cups Six13 fig & apple liqueur
1/2 cup white sugar
1 cinnamon stick
Applesauce
Add all ingredients to a pot and cook over low heat for 45 minutes to 1 hour, stirring occasionally to prevent sticking and burning. Adjust seasoning with salt and additional cinnamon, if desired.
Apple-Fig Glaze
Add ingredients to a saucepan and reduce by one-half to three-fourths. The mixture should resemble a syrup. Drizzle the glaze over pork chops and serve alongside the applesauce. Makes 2 servings.
